    SO incredibly moist and delicious. Sorry no pic... we ate it up too fast! My new go-to recipe. Used around 3 cups of all shredded carrots and will sift the flower next time. I need an excuse to make another one now...

    i turned this recipe into cupcakes as cakes are too much of a commitment for me lol! this is now my go-to recipe when i get bored in quarantine. it's foolproof, quick AND a huge hit with my parents!!

    Great recipe will use again! Added 1/2 Cup unsweetened apple sauce in place of 1/2 a cup of vegetable oil — also made the buttercream icing so good!

    My first made from scratch carrot cake. Very easy. Had to substitute the buttermilk. Used half skim and half evaporated milk. Added vinegar to milks to make it like buttermilk. Delicious!!!!

    Made this for easter dinner and was it ever delicious!!! So so moist! Made it two layers not 3...and cut the cream cheese frosting recipe in half! Was plenty!

    Turned out amazing. I could not stop eating this lol. I did make my own buttermilk as well as replaced the oil for applesauce. My family loved it, definitely keeping this recipe for the future 😊

    Soooo good, and so quick! We also made cupcakes. Only change is we cut the oil in half and used half a cup of applesauce we needed to use up. They were sooo good, even without the frosting (though the frosting takes it to another level!) Thank you for sharing this recipe!
